‘We are increasingly dependent on the food industry, without knowing precisely their specific practices or the origin of all the ingredients. With the dairy set and corresponding recipe book, I want to invite people to make their own food products and to experience the taste of pure food. You can make butter from fresh farm milk. With the remaining milk and the resulting buttermilk, you can make cheese and quark. And you can use the leftover whey to make a drink or add a tangy taste to homemade bread. In this way, you don’t have to throw anything away and you are reintroduced to pure flavours from our own dairy culture. Do-it-yourself is fun and educational, and turns the passive consumer into a creative user.’
